Pumpkin Bread


Honestly, I love this time of year because autumn means pumpkins, and I LOVE pumpkin bread! I make a mean loaf of the stuff, and I've been told more than once that it's even better than Great Harvest's version. I don't mean to toot my own horn or anything... but I have to agree! It's delicious! And just to be nice, I am going to share my recipe (yes it is my own creation) with you! So go ahead, don't waste my generosity by NOT making a batch... get into that kitchen and BAKE!

Bree's Pumpkin Bread:
1/2 cup butter
1 cup sugar
2 eggs
1 cup canned pumpkin
1 and 3/4 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon ground cloves
1 cup chocolate chips
*some people like to add nuts to their pumpkin and banana breads, I guess you can add a cup of nuts if you want, but YUCK! ;) Pecans or walnuts would be best.

Cream together the butter, sugar and eggs. Add the pumpkin, and mix thoroughly. In a separate bowl, sift all of the dry ingredients together. Gradually add the dry mixture to the creamy pumpkin mixture, and mix until well blended. Add the chocolate chips (and nuts) if desired. Pour batter into a greased loaf pan (I use Wilton's Cake Release and it's a miracle worker!) and bake at 350 degrees for one hour, or until a toothpick inserted into the center of the loaf comes out clean.

But, here's the real secret... when measuring out the spices... use overflowing measurements. Do not level off the spoon! Don't double the amount or anything, but just don't be meticulous about exact amounts. It has way better flavor this way! Trust me, I've tested it out!

Hmmmm Pumpkin Bread, that sounds good.. Guess I need to go back to the store and get another can of canned pumpkin. Bob is going to start wondering what is up after making pumpkin cookies and now pumpkin bread. Thanks for sharing.

I finally remembered to buy pumpkin filling. For a non-pumpkin eater, that was hard to remember.
